It's funny how much your mood affects what you eat. I just wanted some comfort food yesterday, and comfort food I got :) I ended up making my rice pudding, which isn't all that bad.
- 2-3 c water
- 1 T Smart Balance
- 1 t vanilla
- 1 cinnamon stick
- 1 3/4 c Arborio rice
- 5-6 c milk
- 1 c raisins
- 3 egg yolks
- 1/3 c sugar
I've found arborio rice to make the best rice pudding, and I've done a lot of field research.
This is a simple recipe, too. You just boil the water, add some butter, vanilla, a cinnamon stick, rice and raisins. As the water evaporates, you just keep adding milk and letting it simmer until the rice is cooked.
Then, you add the egg yolks and stir for 2-3 minutes. Add the sugar to taste and you're done.
Comfort food is the best :)
Plus now, I have rice pudding for the rest of the week. Yay!!!
Today, I had the last of the yogurt smoothie and it still tasted good. I already made my new batch for the upcoming week, too!
We went to walk the doggies then came home and made bacon, egg & cheese breakfast sandwiches. I won't lie either, I had a couple of spoonfuls of that yummy rice pudding along with my standard iced coffee.
Here's my Dulci, ignoring her breakfast option because the smell of bacon was in the air.
