Workout: running after a 17th-month old - nuff said!
Last Sunday was memorable with breakfast with my parents, church, football watchin' and slow cookin' – much like today. I say "slow", but that's the “whoops” part.
Ya see, I'm trying to make Sunday's my "Slow-cookin" days by throwing stuff in the ol' crocky and walking away. Letting Sunday night's dinner cook by itself sounds so dreamy. Plus, if I make enough of it, I can use it for another meal during the week. Hee-hee, I know - sneaky ;)
For this week's edition, I got this great idea from Kimberly about cooking a whole chicken in the crocky. I just set it in, added some butter salt and pepper and let it go. Unfortunately, I waited too long to do this and there was no way it was going to be done by dinner time.
A big fat WHOOPS!
RC said we should just let the chicken finish cooking and plan to eat it tomorrow (great idea), but he wanted to grab something for dinner (not so great idea).
I was *flexible* and moved Monday's planned dinner over (great idea, IMOHO)!
I got inspiration from The Chew to try out this little gem: Michael Symon's Mac and Cheese Casserole. The version below is a little different, but still yummilicious!
Butternut Squash Mac-N-Cheese
- 1 butternut squash
- 1 onion
- 1 cup whole-fat milk
- 2 T flour
- 1 cup gruyere shredded cheese
- 6-8 cups cooked macaroni of your choice
- Peel and cut the squash into small cubes. Spray with cooking oil and roast until tender (350 for 15-20 minutes)
- Sautee onion until translucent
- Add garlic
- Add milk and flour, stir until thickened
- Add butternut squash and mash
- Stir in cheese and pasta
I meant to add some bacon, but completely forgot. I can’t say I was too sad, this was really GOOD! Rumor was that the BB dropped some on the floor.
The doggies were right on it.
The BB also got a really important phone call on her remote control/phone – gotta see what that’s all about.
